Instructions
Step 1
In a medium sauce pan, melt butter, if desired. This recipe is very good without the butter, if you would like to skip. No substitute is needed.
Step 2
Add brown sugar, juice and salt to the pot. Whisk together.
Step 3
Stir in carrots. Cover and cook until tender. Depending on the thickness of the carrots, this may take up to 30 minutes.
Step 4
The carrots may be served at this point. Alternately, you may transfer to an oven-safe pan and broil as desired. Watch carefully as they can catch quickly
Step 5
An aesthetically lovely alternative is to use whole rainbow carrots with greens. Trim the greens to about 1/2 inch and peel carrots, "sharpening" the end to a point. Cook as directed above. Broiling adds a lot of polish to this version
Step 6
If you need to keep warm, place in the oven safe pan and cover tightly with foil and keep in a 200 degree oven. You may broil before or after this stage
