Simon Holst - This cake seems to defy alot of traditional cake-making wisdom, but hey, it works and you get a large, moist cake at the end. In fact it's so simple there's little more for the kids to do than a bit of mixing, then licking the bowl... for one 22x23cm cake or two 21cm round cakes:

Instructions

Step 1
Preheat the oven. When the oven is hot, non-stick spray and line your selected pan(s) with baking paper. Sift the first five ingredients (the dry stuff) into a large bowl. Add the remaining ingredients and whisk until smooth (that's it)! Pour the batter (it will be runny) into the pan(s) and bake for 30-40 minutes, until the centre springs back when pressed gently and a skewer inserted into the middle comes out clean. Remove from the oven and cool on a rack before icing with a double mixture of icing for the chocolate fudge square.
