Step 1
Prep: Preheat your oven to 190°C (170°C fan-forced). Grease a 12-cup muffin tin or line with paper liners. Mix Dry: In a large bowl, whisk together the flour, ground flaxseed, baking powder, baking soda, cinnamon, and salt.
Mix Wet: In a separate medium bowl, beat the eggs. Whisk in the maple syrup, oil, vanilla, and applesauce until smooth.
Combine: Gently fold the wet ingredients into the dry ingredients. Stir until just combined—be careful not to over-mix, as this can make the flaxseed texture too dense.
Fold: Fold in the diced apples and chopped dates. Bake: Scoop the batter into the muffin tin, filling each cup about ¾ full. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Cool: Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
