Instructions

Step 1
Start by preheating your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.

To prepare the base layer, combine the melted butter and sugar in a mixing bowl. Whisk until smooth, then add the egg and vanilla extract, mixing well. In a separate bowl, combine the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until a soft batter forms. Spread this evenly into the prepared pan, making sure the surface is level.
Step 3
For the cream cheese layer, beat the softened cream cheese in a bowl until smooth and creamy. Add the egg and sugar, and continue mixing until the texture is silky and lump-free. Pour this mixture over the base layer and spread it gently to cover completely.
Step 4
Sprinkle the sugar evenly over the top. This step is key to creating the signature crisp and slightly crackly crust once baked.
Step 5
Place the pan in the oven and bake for 30–35 minutes. The edges should turn golden brown, while the center remains slightly soft. Avoid overbaking, as the gooey texture in the middle is what makes these bars special.
Step 6
Remove from the oven and allow the bars to cool completely in the pan. Once cooled, slice into squares and serve.
