Instructions
Step 1
1. Melt 1 tablespoon of unsalted butter in a large skillet over medium heat.

2. Add ½ cup of finely chopped yellow onion and 3 medium cloves of garlic. Cook until the onion is softened, about 2 minutes.

3. Add 12 ounces of broccoli florets and ⅓ cup of lower-sodium vegetable broth. Cover and cook for 3 to 4 minutes.

4. Stir in 15-ounce can of no-salt-added butter beans, ¾ cup of half-and-half, ½ teaspoon ground pepper, ½ teaspoon dry mustard, and ½ teaspoon salt.

5. Simmer uncovered for about 2 minutes.

6. Cool for 2 minutes, then stir in ¾ cup of shredded sharp Cheddar until melted.
Step 7
7. Serve with 8 toasted slices of crusty whole-wheat baguette.
