Roman Lentils

Mildly chillied lentils, healthy and nutritious vegan dish, cheap and very simple to make. Very versatile, can be served as whole meal, or as part of a meal with more carbs or even with meat, and a fantastic way to use up things lying around the fridge that need eating as you can chuck almost anything in and that makes it a little different each time too. Tends to taste even better if left to sit for a while, or eaten as leftovers the next day.

Instructions

Step 1
Finely chop the onion and celery, crush and chop the garlic
Step 2
Add the oil, onion, celery, garlic, chilli flakes, bay leaf and some salt and pepper to a pan and fry until onions and celery are soft/see through
Step 3
Add the lentils and continue to fry and stir for a minute
Step 4
Add the litre of water, keep on full heat until water is brought to boil, then reduce to medium heat. Stirring occasionally to prevent any food sticking to bottom of the pan
Step 5
Roughly chop the sweet potato into small pieces and add to pan. (I tend to add any extra bits of veg that need eating up at this stage too if I want to, haven't come across one that hasn't gone well so far) Continue to cook for around 20-30mins or until all food cooked to being nice and soft. Season/add more chilli to taste at this point
Step 6
Once cooked, keep pan on low heat, the meal should be the consistency of a curry, not runny liquid but not dry. Add as much spinach as you like/can fit in your pan and stir in until spinach is soft
Step 7
Serve alone, or over chips/other side. Optional serve with another drizzle of olive oil ontop.
Step 8
Can also be served with sausages/other meat on the top if you wish.
