Step 1
Place beans and place in a large stock pot and cover with 6 cups of water and boil over high heat.
Step 2
Once the beans are boiling reduce the heat to medium-low and simmer for 1-2 hours until you are happy with the texture of the beans.
Step 3
Drain the remaining liquid off the beans and mix with olive oil, lemon juice, garlic, rosemary leaves, and salt and pepper to taste.
Step 4
Sprinkle with vegan parmesan if using.
