Instructions
Step 1
Process in a blender 1 egg and 12oz of cottage cheese until smooth
Step 2
In a separate bowl add cottage cheese mixture to 11 eggs. Beat with a whisk until smooth. Do not use the blender for this step. Add pepper to taste.
Step 3
Lightly oil a 12 cup muffin pan (regular size muffins)
Step 4
Add chopped veggies, meat and cheese proportionally to each cup
Step 5
Pour egg mixture evenly into each cup.
Step 6
Cook at 325° oven in a water bath until internal temperature of cups is 170°. About 20-25 minutes.
Step 7
Store in fridge for up to 3 days or in your freezer for longer
