Bacon & Smoked Gouda Egg Bites

If you love Starbucks egg bites, you will love these. So close you will think you just went through the drive through.

Instructions

Step 1
Preheat your oven to 350 degrees with a pan of water on the lowest oven rack. This will help create steam in the oven for a Sous Vide method.
Step 2
Shred your gouda cheese if it's not already. I buy a round so it needs to be grated.

Step 3
Place all ingredients EXCEPT the Bacon Bits into a blender pitcher. You can use a food processor as well. I find a blender works better for pouring mixture into the muffin cups.
Step 4
Blend until smooth. Approx.. 60-90 seconds.
Step 5
Grease a 12 count muffin pan. I use a silicone muffin pan. Make them come out super easy.

Pour egg mixture into greased muffin cups. Cups will be about 3/4 full.
Step 7
Sprinkle tops with bacon bits. I use store bought bacon bits for easy and you can add as many or as few as you would like. Just know this will impact the calorie count per egg bite.
Step 8
Bake egg bite for approx. 20 mins. Rotate egg bites half way though baking.
Step 9
Once done, let cool in pan. Remove egg bites and package into packs of 2. I use snack Ziplock bags. I freeze these for a quick grab and go breakfast.
