Instructions
Step 1

Cook and chop bacon. Chop spinach and tomatoes. Grease muffin tin. Put bacon, spinach and eggs in muffin tins. Preheat oven to 350 degrees.
Step 2

Beat 10 eggs with heavy cream, cottage cheese, and seasonings. Pour egg mixture on top of each cup. Sprinkle Mexican blend cheese on top. Bake for 20 min. Let sit for 5 min then cool on cooling rack.
