Step 1
Cook and chop bacon. Chop spinach. Set bacon and spinach aside. Preheat oven to 350 degrees. Grease muffin tin. Beat 10 eggs with heavy cream, cottage cheese, and seasonings.
Step 2
Put bacon and spinach evenly divided into muffin tin cups. Pour egg mixture on top of each cup. Sprinkle Mexican blend cheese on top. Bake for 20 min. Let sit for 5 min then cool on cooling rack.
