Mix the dry ingredients

In a large bowl combine the flour, salt, and baking powder.

Incorporate the shortening

Add the shortening and work it into the flour with your fingers until the mixture resembles coarse crumbs. If you prefer to use a mixer, you can cream the shortening with the paddle attachment for about two to three minutes on medium speed and then add the flour, mixing until the texture becomes crumbly.

Gradually add the hot water while mixing until a soft dough forms.

Knead the dough

Knead the dough by hand or with a mixer on speed two or three for about fifteen minutes until the dough becomes smooth and no longer sticks to your hands or the bowl. The dough will feel quite soft when it first comes together. This is normal and it will gain more structure as it rests.

Cover the dough and allow it to rest for forty five minutes to one hour so the gluten can relax.

Lightly sprinkle the dough with a little flour once you remove it from the bowl. Divide it into pieces of about thirty grams each and roll them into small balls. Cover the dough balls with a cloth so they do not dry out while you work.

Roll the tortillas

Lightly flour your work surface. Place one dough ball on the surface and sprinkle a little flour on top. Roll it out with a rolling pin into a thin circle. Dust the rolling pin and the tortilla lightly with flour as needed while extending it.

Cook on the comal

Heat a comal or skillet over medium high heat. Place the tortilla on the hot surface and cook for about ten seconds, or until small bubbles begin to form. As soon as you see them, flip the tortilla and cook the second side for about twenty seconds.

The best tip I can give for this step is to gently lift the tortilla and check the bottom. You should see light golden spots forming. At this point the tortilla can go from soft to crunchy in just a few seconds, so keep a close eye on it.

Flip the tortilla once more. Within two to three seconds it should begin to puff. Let it cook for about ten seconds more, then remove it and place it with the rest of the tortillas to keep warm.

Stack the cooked tortillas in a clean cloth or tortilla warmer so they stay soft and warm
