Instructions

Step 1
Preheat the oven to 400F. Rinse and drain the canned chickpeas and toss them in a mixing bowl with 1 tsp olive oil, the smoked paprika, pinch of salt, and pepper to taste. Spread onto a baking tray lined with parchment paper and bake for 15mins.
Step 2
In the meantime, rinse and drain the basmati rice and set aside. Dice the onion and finely chop the garlic.
Step 3
Heat up a sauté pan to medium heat. Coarsely chop the almonds and toast them in the dry pan for 3-5min, then set aside. Add 2 tbsp olive oil into the pan followed by the onions and garlic. Sauté for 2-3mins.
Step 4
Add the orzo and sauté for 3-4mins. Then, add 1 tsp salt, the sweet paprika, and a pinch of oregano. Give the pan a stir, then add the basmati rice. Sauté for another minute or so, then add the veggie stock.
Step 5
Turn the heat to medium high. When the water begins to boil, give the pan a good stir and turn the heat to medium low. Cover and cook for 15mins.
Step 6
Add the toasted almonds, raisins, and roasted chickpeas to the rice and fluff with a rice paddle or fork. Plate and garnish with freshly chopped parsley to serve.
