Salmon + Broccoli Fritters

Quick salmon and broccoli fritters with lime and dill, pan-fried in coconut oil until crisp. Serve with salad and lime wedges, plus a dip like yoghurt or mayo.

Step 1
Cook the broccoli in a saucepan of salted boiling water for 2 minutes, then drain and leave to steam dry for a minute or two. Blitz in a food processor until finely chopped then empty into a bowl.
Step 2
Add the salmon, eggs, flour and dill to the food processor along with the lime zest and juice. Blitz until smooth. Transfer the mixture to the bowl of broccoli and season to taste with a little salt and pepper.
Step 3
Heat a little coconut oil in a frying pan over a medium heat and spoon in tablespoons of the mixture, flattening each tablespoon down a little and cooking for 2–3 minutes before flipping and cooking for a further minute. Continue until all the mixture is used up.
Step 4
Cut the remaining half lime into wedges and serve on the side, with a salad.
