Instructions
Step 1
Preheat the oven to 205 C (400 F). Line a baking sheet with parchment paper.
Step 2
In a medium bowl, combine the bread crumbs, cheese, parsley, tomatoes, pine nuts, garlic, salt and several grinds of pepper.
Step 3
Place the mushrooms, cavity side up, on the baking sheet. Drizzle with olive oil and sprinkle with salt. Spoon the filling into the mushrooms and drizzle with more olive oil.
Step 4
Bake until the mushrooms are tender and the filling is golden brown, around 18 to 22 minutes.
Step 5
Garnish with parsley and sprinkle with red pepper flakes, if desired. Season to taste and serve.
