Cheesy Smoked Sausage Pasta

A quick one-skillet pasta with smoked sausage, Ro-Tel tomatoes, garlic, and a creamy broth-milk sauce. Finish with melted cheese and sliced scallions. Serves 6–8.

Ingredients

1onion
medium, diced
1 pkgsmoked sausage
sliced into rounds
1 Tbspminced garlic
1 x 16 ozpasta
pkg favorite, we used fusilli
2 ½ cupschicken broth
1 x 10 ozcan Ro-Tel
original, we use mild version
1 cupmilk
⅓ cupbutter
melted, or margarine
1 cupshredded cheese
Monterey Jack or a Jack/Cheddar blend
1 bunchscallions
thinly sliced
2 tablespoonsOlive oil
Instructions
Step 1
Heat a couple tablespoons of olive oil in a large skillet or pot until hot.
Step 2
Add diced onions and sausage rounds to hot oil and cook until lightly browned.
Step 3
Add minced garlic, Ro-Tel, and pasta.
Step 4
Mix until incorporated with the sausage and onions.
Step 5
Mix the milk, melted butter, and chicken broth together, then pour over the pasta-sausage mix.
Step 6
Cover and allow to simmer on medium heat, stirring occasionally, until the pasta is tender, about 10–15 minutes.
Step 7
Once pasta is cooked, stir in cheese and scallions. Serves 6–8.
