High Fiber Jelly

This quick and simple jelly recipe is made in just 10 minutes, requires no cooking, and contains an astounding 8 g of fiber. There's no added sugar, and it only has 50 calories. Just let psyllium thicken some fruit juice, and serve!

Instructions
Step 1
Mix together fruit juice, lime juice, and psyllium husk in a small bowl or mason jar. Let sit for 10 minutes so the psyllium thickens the juice before serving

I'm only making 1 large serving (95 g, or 6 tbsp) of jelly today, but you can easily scale this up and store the extra in the fridge

Optionally add 1/2 tsp (2.5 g) of liquid monk fruit to make it a little sweeter if you like
