Step 1
Preheat the oven to 200°C
Step 2
Cut up the veggies. Since the broccoli cooks faster than the cauliflower, dice the cauliflower into small florets. Cut the broccoli into large florets.
Step 3
Toss the broccoli and cauliflower with olive oil, salt and pepper.
Step 4
Bake for 40 - 60 minutes, tossing every 15 minutes or so, or until the vegetables are cooked to your liking.
Step 5
Meanwhile, on very low heat in a pot on the stove, mix the white beans with lemon juice from 1/2 - 1 lemon, olive oil, minced garlic, salt and pepper.
Step 6
When the vegetables are done, scoop a few spoonful of beans into a bowl. Add the roasted vegetables and top with a good sized portion of grated Pecorino Romano or Parmesan. Enjoy!
