Noodles have never tasted so nutty. Packed with crunchy peanuts, edamame for protein, and a tangy mango peanut sauce, this dish will have you doing cartwheels with every bite. (Have we lost our noodle ?! ) Serve it as the main event or as a savory side to such recipes as the Firecracker Tofu with Coconut Rice (here).

12 ounceswhole wheat spaghetti
or brown rice vermicelli noodles
1 cupshredded red cabbage
1red bell pepper
seeded and thinly sliced into matchsticks
1carrot
large, julienned
1 cupedamame
thawed
6green onions
diced
1 cupfresh cilantro
chopped, optional

Instructions
Step 1
Make Mango Peanut Sauce
Step 2
Cook the spaghetti according to the package directions. Run under cold water and let cool to room temperature.
Step 3
In a bowl, combine the noodles and vegetables and pour the sauce over the top. Toss until the noodles are coated in the sauce, then serve with the crushed peanuts and lime wedges.
Step 4
Storage: Store, fully prepared, in the fridge for up to 4 days.
