2onions
medium, diced

400gchestnut mushrooms
diced

2 x 400gtin chopped tomatoes

2 x 400gtin kidney beans
drained and rinsed

3cloves garlic
minced

2 Tbsptomato purée

1 tspmild chilli powder

½ tspsmoked paprika

salt

freshly milled black pepper

rapeseed oil
for cooking

Instructions
Step 1
Heat some oil in a saucepan on medium heat and add the onions and garlic. Fry for 3 minute until softening.
Step 2
Add the mushrooms and spices and mix before frying for another 4 minutes.
Step 3
Add the tomatoes, tomato purée and kidney beans and mix well. Boil for 10 minutes uncovered on medium heat.
Step 4
Serve in a tortilla with salsa, skyr, rice and cheese.
