Ingredients

4 x 7 ozfresh tomatoes
each cut into 4 thick slices
¼ cupbalsamic vinegar
¼ cupolive oil
¼ tspsalt
¾ tspblack pepper
divided
½ cupfresh basil
chopped
½ cupgrated parmesan cheese
2 Tbsptomato paste
1 tspgarlic
minced
2.5 lblean ground beef

Instructions
Step 1
In a shallow dish arrange tomato slices in a single layer. In a small bowl whisk together vinegar, oil, salt, and 1/4 tsp. pepper. Pour over tomato slices. Cover and let stand 15 minutes to 1 hour.
Step 2
Meanwhile, in a large bowl combine next four ingredients (through garlic) and remaining 1/2 tsp. pepper. Add ground beef; using clean hands, mix lightly until combined (do not overwork). Shape mixture into eight 3/4-inch-thick patties. Press an indentation in the center of each patty. (If you like, cover and chill patties up to 4 hours.)
Step 3
Grill patties on a greased rack, covered, over medium, turning once, until done (160°F), 12 to 14 minutes. Top each with a cheese slice the last 1 minute of grilling.
Step 4
Drain tomatoes. Serve burgers on buns with tomato slices and whole basil leaves.
