Potato Soup with Bacon (Kartoflanka z boczkiem)

A hearty Polish potato soup simmered in beef broth with carrots and parsley root, enriched with bacon and onions, then thickened with flour and finished with fresh parsley.

Instructions

Step 1
Cook the potatoes, carrot, and parsley in boiling broth for 30 minutes.
Step 2
Fry the bacon with the onions until golden. Add to the soup with half of the drippings.
Step 3
Add the flour to the rest of the drippings. Fry until golden, dilute with soup liquid. Add to the kettle, bring to boil.
Step 4
Season with salt, add green parsley.
