Instructions
Step 1
Wash and dry the lettuce. Tear it into bite-sized pieces.
Step 2
Peel and quarter the grapefruit. Save one quarter for the dressing.
Step 3
Halve and pit the avocado. Keep one quarter for the dressing. Thinly slice the flesh and scoop out.
Step 4
Wash and juice the lime into a small bowl with the reserved flesh of the grapefruit. Add the reserved flesh of the avocado and mash thoroughly. Add honey, salt, and pepper. Whisk and set aside.
Step 5
Heat frying pan over medium heat.
Step 6
Coat the pan base with coconut oil and fry the garlic for 30 seconds.
Step 7
Dry prawns with paper towels. Add the dried prawns to the frying pan. Cook for about three minutes until opaque.
Step 8
Arrange lettuce on plates. Top with avocado, grapefruit, and prawns. Drizzle with dressing and serve.
