YAMITSUKI (やみつき), or "addictive" cabbage in Japanese, is a salad often served in IZAKAYA (Japanese pubs) or YAKINIKU (BBQ) restaurants. This type of dish is also known as SHIO KYABETSU (salt cabbage). It is fresh and crunchy. When served with yakitori, it is often considered a palate cleanser between menu items.

Instructions

Step 1
In a large bowl, combine all ingredients for pickling and mix well.
Step 2
Wash the cabbage and cut it into bite-size pieces.
Step 3
Add the cabbage to the bowl and rub the dressing and cabbage leaves with your hands. Use gloves to protect sensitive skin.
Step 4
Serve with yakitori as a salad.
