Instructions

Step 1
Chops new potatoes and put in a saucepan of salted water ready to boil. Trim broccoli and place in salted water to cook.
Step 2
Trim the tail off the chicken breast to form rounded meat (you can roast these separatelytoneat with the meal or roast off and use for sandwiches or lunches). Slice a pocket into them and fill with stuffing. (Make stuffing as per packet instruction) fold breast shut and use a cocktail stick to keep closed. Season breast with salt pepper garlic powder and any other of your favourite seasonings. Place in oven at 180 degrees and roast until cooked. *roughly 20 to 30 minutes depending on size of breast
Step 3
Turn on potatoes and broccoli. Finely chop shallots and add to a pan with a little olive oil or butter. Gently fry until soft add teaspoon of dried sage. Add chicken stock and cream cheese. Stir to combine then set aside.
Step 4
Rest chicken once cooked then slice. Plate up with veg andi potatoes and pour the sauce over the chicken.
