Instructions
Step 1
Preheat your oven to 220°C/200°C fan/gas mark 7.
Step 2
Pour enough oil into a deep baking tray to cover the bottom and pop into the oven.
Step 3
Peel and chop the potatoes into 3cm chunks.
Step 4
Pour boiling water from a kettle into a large saucepan on high heat with ½ tsp salt. Boil the potatoes for 5-6 mins or until the edges are soft.
Step 5
Once the potatoes are ready, drain in a colander and pop back into the pan.
Step 6
Sprinkle over the Parmesan and give your pan a shake to fluff up the potatoes and coat them.
Step 7
Carefully add your potatoes to the hot baking tray, turning in the oil. Season with salt, then roast on the top shelf of your oven until golden, 30-35 mins.
Step 8
Lay a slice of Serrano ham horizontally on a baking sheet lined with lightly oiled baking parchment and place a chicken breast (cutlet side up) vertically on it - then wrap the ham around the chicken and flip it over so the seam side is down. Drizzle with oil and roast on the middle shelf for 27 mins (so, 7 mins after the potatoes go in)
Step 9
Halve any thick brocoli stems and add to the chicken tray 14 mins after the chicken has gone in and leave it there until the chicken is done.
Step 10
During those 14 mins, heat a drizzle of oil in a saucepan on medium heat and then add the chicken stock. Bring to the boil and reduce by half (3-4 minutes). Mix in the crème fraîche, bring back to the boil, remove from the heat and add salt/pepper to taste
Step 11
Remove potatoes, chicken and broccoli from the oven, sprinkle potatoes with truffle zest and pour the sauce over the chicken
