Instructions
Step 1
Combine the watermelon juice, lime juice, and powdered pectin in a large pot.
Step 2
Bring to a full rolling boil over high heat, stirring constantly.
Step 3
Add all 4 cups sugar at once.
Step 4
Return to a full rolling boil that cannot be stirred down.
Step 5
Boil hard for 1 minute, stirring constantly.
Step 6
Remove from heat and skim off any foam
Step 7
Ladle into hot sterilized jars, leaving ¼ inch headspace.
Step 8
Wipe rims, apply lids and bands fingertip tight.
Step 9
Process in a boiling-water bath for 10 minutes (adjust for altitude if needed).
