Instructions

Step 1
Prepare the mushrooms: In a food processor, pulse the mushrooms until they are finely chopped (about the size of rice). Sauté them in a dry skillet over medium-high heat for 5-7 minutes until their moisture evaporates. Remove and let cool. [1, 2, 3, 4]
Step 2
Mash the beans: In a large bowl, mash the beans or lentils with a fork until mostly broken down, leaving some texture
Step 3
Combine: Add the cooled mushrooms, ground beef, onion, garlic, breadcrumbs, egg, Worcestershire sauce, soy sauce, salt, and pepper to the beans. Mix gently with your hands until just combined. Do not overmix, or the texture will become too dense.
Step 4
Form patties: Divide the mixture into 4-5 equal portions and shape them into patties, Chill in the fridge for 10-15 minutes to help them firm up.
Step 5
Cook: Heat oil in a skillet or on a grill over medium-high heat. Cook the patties for 4-5 minutes on the first side until a crust forms, flip carefully, and cook for another 3-4 minutes until cooked through (an internal temperature of 160°F is reached). [1, 2, 3, 4, 5]
