Hummus pasta is one of those easy dinners that I rely on when a day has gone sideways and everyone still needs to be fed. In the time it takes to boil the pasta, I can have the sauce ready and waiting, so I can get dinner on the table in under 15 minutes.

Instructions
Step 1
Bring a large pot of salted water to a boil, and cook the pasta according to the package directions until al dente. Reserve 1 cup of the pasta water, drain the pasta well, and set aside.
Step 2
Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
Step 3
Add the hummus and stir to combine. Add half of the reserved pasta water to thin the sauce. Add the pasta to the pan, and toss to coat with the sauce, adding splashes of pasta water as needed so the sauce coats the noodles but is neither runny nor gloppy. Taste and adjust the salt and pepper as needed. Serve immediately.
Step 4
Refrigerate leftovers in an airtight container for up to 5 days.
