Zucchini Fritters

Easy zucchini fritters to bake or fry!

Instructions

Step 1
Grate zucchini with the large side of a box grater into a colander or sieve (preferably lined with cheesecloth). Add a pinch or two of salt and let sit for 30min to 1hr.
Step 2
Using your hands (and the cheesecloth if using), squeeze all liquid out of the zucchini before adding to a large mixing bowl.
Step 3
Add all other ingredients for the fritters to the bowl and mix well. Divide into 6 equal sized balls once thoroughly mixed and flatten the balls into patties.
Step 4
If baking, preheat oven to 400⁰ and bake in 10min increments until crispy, flipping the fritters at each 10min interval. This will take longer depending on how well you squeezed out the zucchini liquid in step 2. It should take about 20-30min to bake but bake longer if they haven't fully crisped yet! Alternately these can be pan fried in 1 tbsp neutral oil on medium high heat.
Step 5
To make yogurt sauce, combine all ingredients (yogurt, lemon juice, parsley, salt) and mix well. Serve fritters hot alongside the yogurt sauce for dipping.
