This is a high hydration recipe. Letting it rise for 18 hours will allow it to become bubbly, light, and crispy. Makes half a sheet pan per recipe. For a full sheet pan, double the recipe.

Instructions

Step 1
1. Mix the dough: In a bowl, combine the flour, instant yeast, salt, and water. Mix until just combined—the dough should look shaggy and loose. Do not over-mix.

2. Warm rise: Cover the bowl and let it sit at room temperature (around 70°F) for 18 hours. Do not refrigerate during this time.

3. Stretch & shape: Coat a heavy-duty baking sheet with the olive oil. Transfer the dough into the pan and gently press outward towards the edges with your fingers. Let the dough rest for 10 minutes to relax the gluten, then stretch again. Repeat this until the dough reaches the corners of the pan.
Step 4
4. Bake: Top with your favorite sauce and cheeses. Bake in a very hot oven (500°F to 550°F) for 10 to 12 minutes, or until the bottom is crisp and the crust is blistered and golden.
