Easy Chicken Enchiladas

Chicken burritos
Part 1 slow cook the chicken
Oil brush the slow cooker
Cube the chicken and add to the slow cooker
Salt, pepper & cumin seasoning
Ranch and taco dry mix
Chicken broth for liquid
Oil brush the slow cooker
Slow cook on low for 8 hours
Part 2
Chop the cooked chicken finer pieces
Add can of green Chiles mild.
Add chopped red pepper, onion and cilantro
Combine in a large mixing bowl.
In a separate bowl combine cream of chicken soup 2 cans and 1 cup sour cream along with can of green enchilada sauce
Season with cumin and cayenne.
Part 3
Spread soup mixture lightly in bottom of large baking dish.
Spread small soup mixture on each tortilla. Load chicken mixture into flour tortillas as well as blend tortillas. Add cheese. Roll and place seam side down in baking dish.
Remainder of soup mixture spoon on top of all burritos spreading it evenly.
Top off with cheese, red pepper, olives and cilantro.
