No Bake Vegan Protein Bars

Most vegan "protein" bar recipes on the internet aren't actually protein bars—they're energy bars. They're usually loaded with dates, maple syrup, or nut butter and simply happen to contain some protein powder. Some don't even use protein powder at all, relying on nuts as their primary protein source.
This vegan protein bar is different. Each bar contains 19 g of protein for under 120 calories, with just enough carbohydrates and fat to improve the texture while keeping the protein-to-calorie ratio high. They're no-bake, easy to make, freeze well, and are naturally vegan, sugar-free, gluten-free, and nut-free.

Step 1
In a large bowl, whisk together the pea protein, cocoa powder, and salt.
Step 2

Add in the the water, liquid sweetener, melted coconut oil, and vanilla, and mix with your hand wearing a kitchen glove. The dough should look a little too dry, but hold together easily when pressed.
Step 3

Firmly press the mixture into a parchment lined 9" square pan.
Step 4

Refrigerate for at least 2 hours before slicing into 8 protein bars.
Step 5

Store protein bars in the fridge for up to 1 week, or in the freezer indefinitely.
