Instructions
Step 1
GOLDEN IMMUNE-BOOSTING CHICKEN STEW Ingredients: · 4–6 chicken drumsticks
· 1 tbsp oil
· 1 large onion, diced
· 4–5 cloves garlic, minced
· 2 carrots, peeled and diced small
· 2 medium potatoes, peeled and diced small
· 1 red pepper, diced
· 2–3 fresh tomatoes, roughly chopped
· 4–5 spring onions (white parts diced, green parts sliced)
· Large handful fresh parsley, chopped
· 1 lemon (juice only)
· 6–7 cups boiling water
· Chicken stock powder (use half the recommended amount)
· Salt and pepper to taste Instructions: 1. Season drumsticks with pepper. Heat oil in a large pot over medium-high heat. Brown drumsticks all over, about 5 minutes. Remove and set aside.
2. In the same pot, sauté diced onion and white parts of spring onions until soft, about 5 minutes. Add garlic and red pepper, cook 2 minutes.
3. Stir in carrots, potatoes, and tomatoes. Cook 2 minutes. Add in your seasonings- cumin, paprika and pepper. 4. Dissolve half the recommended stock powder into boiling water. Pour into pot. Return chicken to pot. Bring to boil, then reduce to a gentle simmer. Cover and cook 40–45 minutes until chicken is tender and potatoes are soft.
5. Remove chicken, shred meat off bones, discard bones. Return shredded meat to pot.
6. Turn off heat. Stir in lemon juice, parsley, and green parts of spring onions.
7. Taste and add salt/pepper if needed. Serve with bread if desired.
