Snickers Nice Cream Bar

I've been loving homemade nice cream lately. Check out my copycat recipes for Cherry Garcia and Chunky Monkey. But today is a Snicker's Ice Cream Bar copycat. With just bananas, peanuts, and melted chocolate, you can create a perfectly satisfying and refreshing ice cream bar for a fraction of the fat, added sugar, and calories.

Step 1

Add frozen bananas, almond milk, vanilla extract, and salt to a food processor. Blend for about 3-5 minutes, scraping the sides every minute or so, until you have a smooth and creamy ice cream.

Roughly chop your peanuts.
Step 3

Add chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 30 second intervals, stirring in between with a silicone spatula, until fully melted.
Step 4

Line a 9" square pan with parchment paper. Spread the banana ice cream into an even layer on top of the pan.
Step 5

Sprinkle your peanuts over the nice cream, and lightly press in with a silicone spatula.
Step 6

Pour the melted chocolate over the peanuts, and spread to an even layer. Optionally top the melted chocolate with flaky salt.
Step 7

Freeze for about 2 hours before slicing into 8 ice cream bars.
