Instructions

Step 1
Prep the boats: Cut the cucumbers in half lengthwise. Take a metal spoon and scrape out the wet center seeds to create a hollowed-out ditch down the middle.
Step 2
Dry the boats: Turn the cucumbers upside down onto a paper towel for 5 minutes to drain off excess moisture so your filling stays nice and thick.
Step 3
Mix the creamy seasoning: In a medium bowl, stir together the sour cream (or mayonnaise), garlic powder, onion powder, freeze-dried chives, salt, and pepper until smooth.
Step 4
Toss the cubes: Add the chopped Buddig ham, the tiny cheddar cheese cubes, and 3 tablespoons of the bacon bits directly into the seasoned sour cream. Stir until the meat and cheese cubes are fully coated.
Step 5
Stuff and finish: Spoon the chunky ham and cheese mixture generously into the cucumber boats. Top with the remaining 1 tablespoon of bacon bits for extra crunch. Serve cold immediately.
