Instructions
Step 1
Put the pasta in a pan of cold water over a medium-high heat and leave to cook while you make the sauce.
Step 2
Heat the olive oil in a frying pan over a low heat.
Step 3
Put the onion, garlic, parsley and thyme and rosemary leaves in the food processor and blitz. When finely chopped, tip into the heated oil.
Step 4
Cook gently for 10 minutes to allow the herbs to infuse the oil, then add the butter and allow to melt.
Step 5
Add the peas. Mix well and cook gently until the peas are starting to “pop”.
Step 6
Remove the pan from the heat and allow to cool off slightly.
Step 7
Transfer back to the food processor. Crumble in the feta, season with plenty of freshly ground black pepper and blitz until smooth-ish, light green and creamy.
Step 8
Add the sauce back to the pan, stir in the pasta and stir over allow heat for a few minutes just to allow the flavours to mingle, then serve – this is delicious as is, or served with some griddled sliced chicken breast, or a grilled or air-fried salmon fillet.
