Ingredients

2 cupsfrozen peas
cooked and thoroughly drained
2eggs
large
½ cupfull-fat cottage cheese
½ cupmild cheddar cheese
finely shredded
¾ cuprice flour
2 tablespoonsvital wheat gluten
1 teaspoonbaking powder
¼ teaspoongarlic powder
¼ teaspoononion powder
¼ teaspoonsalt
optional
1 teaspoonlemon zest
finely grated, optional
1 tablespoonsmilk
only as needed
¼ cupcanola oil
Instructions
Step 1
Dry the peas well. Excess water can make the fritters gummy or difficult to brown.
Step 2
Place 1 1/2 cups of the peas, eggs, cottage cheese, and cheddar in a food processor. Blend until fairly smooth. For children who dislike visible peas, blend all 2 cups until smooth.
Step 3
In a separate bowl, combine the rice flour, vital wheat gluten, baking powder, garlic powder, onion powder, salt, and optional lemon zest.
Step 4
Add the dry ingredients to the pea mixture and pulse or stir only until combined. Fold in the remaining 1/2 cup peas, if using them whole.
Step 5
Let the batter rest for 5 minutes. It should be thick but easy to spread. Add milk, one tablespoon at a time, if it becomes overly stiff.
Step 6
Heat a thin coating of oil with a small amount of butter in a skillet over medium-low heat.
Step 7
Add approximately 2 tablespoons of batter per fritter. Flatten each one to roughly 1/4-inch thick with a damp spatula.
Step 8
Cook for about 3–4 minutes on the first side, until deeply golden and mostly set around the edges. Flip and cook for another 2–3 minutes.
Step 9
Cool briefly before serving. Ketchup, plain Greek yogurt, or a mild ranch-style dip should make them especially kid-friendly.
