Instructions
Step 1
Oil the pan with 1 tablespoon Avocado oil and throw in 1.5 cups chopped smoked ham. Saute until ham is golden on edges.
Step 2
Rough chop 3-4 carrots, a half head of cabbage, 3 celery stalks, and one yellow onion while ham sautés.
Step 3
Toss all diced veggies into pot with the ham and cook down until veggies are tender. Add a couple pinches of salt, 2 tablespoons of minced garlic (about 4 or 5 cloves) and 2.5 tablespoons of tomato paste. Stir it in and let the flavors combine for about a minute.
Step 4
Add 3 cans of cannellini beans (or another white bean) and 5 cups of vegetable broth, stir. Add 2 bay leaves and either a bundle of thyme or about 1.5 tablespoons of dried thyme from your spice cabinet. Sprinkle with red pepper flakes to your liking. Let simmer for 10 minutes.
Step 5
At this time, add a half cup more of broth or water if needed, and salt and pepper to taste. Serve with buttered bread or cornbread if desired.
