Wild Rice Pilaf with Mushrooms

Make-Ahead This is a great make-ahead side. Refrigerate it after cooking, then reheat covered at 325°F for 20–25 minutes. Add 2–3 tablespoons of chicken broth before reheating if it seems a little dry.

Instructions

Step 1
Rinse the wild rice.
Step 2
2. Bring the broth to a boil.

3. Add the rice, cover, reduce to low, and cook for 45–50 minutes (follow the package directions if they differ).

4. While the rice cooks, sauté the onion in olive oil over medium heat for 5–6 minutes.

5. Add the mushrooms and cook 6–8 minutes, until they’ve released their moisture and browned.
Step 6
6. Stir in the garlic and thyme; cook for 30 seconds.
Step 7
7. Fold the mushroom mixture into the cooked rice.
Step 8
8. Stir in the toasted pecans and parsley.
Step 9
9. Taste and adjust the seasoning.
