Corn Chip Crust
1 cupscorn tortilla chips
lightly crushed
1 cupFritos
crushed, for a Frito-pie style flavor
Cooking spray
or 1 tsp olive oil
Turkey Taco Filling
0.5 lblean ground turkey
93% lean
1 tspolive oil
0.5onion
small, diced
2cloves garlic
minced
1 Tbsptaco seasoning
½ tspcumin
¼ tspsmoked paprika
½ cupsalsa
choose mild if GERD is an issue
½ cupblack beans
drained and rinsed
1 cupbrown rice
cooked, or quinoa
2 ozlight cream cheese
softened
½ cupshredded Mexican blend cheese
½ cupshredded pepper jack cheese
cilantro
green onions
tomato
diced
shredded lettuce
Greek yogurt
Plain, instead of sour cream
Instructions
Step 1
Preheat oven to 375°F.
Step 2
Lightly spray an 8x8-inch baking dish.
Step 3
Add crushed corn chips to the bottom and gently press into an even layer.
Step 4
Heat olive oil in a skillet. Add onion and cook 3–4 minutes.
Step 5
Add ground turkey and cook until browned.
Step 6
Add garlic, taco seasoning, cumin, and smoked paprika. Cook 1 minute.
Step 7
Stir in salsa, black beans, and cooked rice.
Step 8
Lower heat and stir in cream cheese until melted and creamy.

(Stir in Greek yogurt after removing from heat if using.)

Spread turkey mixture over the corn chip crust.

Sprinkle evenly with:
