Instructions
Step 1
-Brown ground beef in skillet on medium-high heat, add all seasonings and onion
Step 2
-Let cook until beef cooked through and onions softened
Step 3
-Drain any grease from skillet
Step 4
-Add rotel, tomato sauce, minced garlic, beef broth and uncooked rice
Step 5
-Stir well, cover with lid, and cook on medium-low heat for about 15-20 minutes until rice is cooked through ( only stir once about halfway through )
Step 6
-Stir in cubed cream cheese until melted
Step 7
-Top with cheddar cheese, Allow to melt or pop in the oven on broil for a few minutes
Step 8
-Serve with fresh pico de gallo, cilantro and chips
