Creamy Baked Fajita Chicken Casserole

Delicious! Meant to add beans and corn and forgot but very good as is.

I used a full 8oz. can of tomato sauce by mistake but it ended up great, providing more sauce. I also added a small can of sliced black olives which was a nice addition.

My portions were all wrong. I used soy chicken strips. Note to self: next time use veggie crumbles, more veggies, make sure to get fajita mix (not taco), thaw/dry veggies out so not so much moisture, and more cilantro

I made some rice and mixed it with the casserole. Delicious!
