This homemade fermented hot sauce combines fiery habanero peppers with roasted carrots, onions, garlic, and distilled vinegar. Natural fermentation develops a tangy, savory flavor, while the roasted vegetables add subtle sweetness and a smooth, pourable texture.
The recipe requires only 70 minutes of active preparation and cooking. Allow at least 12 days for the pepper mash to ferment, followed by a 7-day resting period for the finished sauce. Serve it with grilled meats, buffalo wings, tacos, rice bowls, eggs, or Vietnamese noodle dishes.

Step 1

Wear food-safe gloves when handling the habanero peppers. Remove the stems, place the peppers in a blender, and blend until they form a smooth mash with no visible chunks.
Step 2

Weigh the pepper mash and mix it with fine sea salt at a 30:1 pepper-to-salt ratio. For 1 lb (450 g) of pepper mash, use 1 tbsp (15 g) of salt. Stir thoroughly, then transfer the salted mash to clean glass Mason jars. Leave enough space at the top for gases to expand during fermentation.
Step 3

Seal the jars and leave them at room temperature for at least 12 days. Check the jars daily and release excess pressure when necessary. A cloudy liquid indicates active fermentation. Skim off any thin white kahm yeast that develops on the surface. Discard the entire batch if you see fuzzy, colored, or unpleasant-smelling mold.
Step 4

Preheat the oven to 400°F (200°C). Place the carrots, onions, and garlic on a sheet of foil set over a baking tray. Drizzle with olive oil, seal the foil into a packet, and roast for approximately 40 minutes, or until the vegetables are completely tender. Transfer the roasted vegetables to a food processor and blend until smooth.
Step 5

Combine the fermented habanero mash, roasted vegetable puree, and white distilled vinegar. Blend or stir until the sauce reaches an even, smooth consistency. Transfer the finished sauce to clean glass jars.
Step 6

Seal the jars and let the sauce rest for 7 additional days in the refrigerator so the fermented peppers, roasted vegetables, and vinegar can develop a more balanced flavor. Keep the finished hot sauce refrigerated in a sealed glass container. Stir or blend in 1 tbsp (15 ml) of white vinegar if the sauce becomes too thick.
