Ingredients

8 oztuna steak
sushi-grade if eating raw, or seared if not sushi-grade, cubed
1 ½ cupssushi rice
cooked, or jasmine rice
2 TbspKewpie mayonnaise
or regular mayonnaise
1 tspsriracha
to taste
1 tspsoy sauce
½ tspsesame oil
1 tsprice vinegar
optional or could sub apple cider and pinch of sugar
0.5english cucumber
diced
0.5avocado
sliced
1green onion
thinly sliced
1 sheetsnori
cut or torn into small pieces
1 tspsesame seeds
Instructions
Step 1
Cook the rice according to package directions and let it cool slightly.
Step 2
In a bowl, combine mayonnaise, sriracha, soy sauce, sesame oil, and rice vinegar (if using).
Step 3
If your tuna is not sushi-grade, sear it in a very hot skillet for 30–45 seconds per side before cubing, or cook it to your preferred doneness.
Step 4
Fold the cubed (1/4") tuna into the sauce until evenly coated.
Step 5
Divide the rice between two bowls.
Step 6
Top with the spicy tuna, cucumber, avocado, green onion, nori, and sesame seeds.
Step 7
Add pickled ginger, wasabi, or furikake if desired, and serve immediately
