Transfer cooked pork and onions to a plate. Wipe excess oil from pan if necessary.
Step 4
Place noodles in a bowl and coat evenly with cooking oil.
Step 5
Reheat pan on medium-high, add noodles and cook until slightly browned and crispy on both sides.
Step 6
While noodles crisp, mix sauce ingredients in a small bowl: Japanese soy sauce, oyster sauce, Worcestershire sauce, sake, tomato ketchup, toasted sesame oil, sugar, curry powder and black pepper.
Step 7
Pour sauce over crispy noodles and mix until evenly coated.
Step 8
Add pork, onion, and chopped green cabbage.
Step 9
Stir-fry for 1-2 minutes until everything is warmed through.
Step 10
Serve with red pickled ginger, bonito flakes, and aonori. Enjoy!
