Instructions

Step 1
Prepare equipment: * one large 800 ml Mason Jar. * one small 300 ml Mason Jar for any excess product. * large saucepan for sterilising jars. * large glass bowl. * measuring spoon - 1/4 teaspoon (1.25 ml). * wooden spoon. * cling wrap. * colander. * paper towel. * medium saucepan. * measuring jug (Pyrex). * serving spoon for filling jar(s).

Prepare additional equipment: * cling wrap; * large colander; * paper towel; * medium saucepan; * measuring jug (Pyrex); * serving spoon.

Step 3
Sterilise mason jar(s): * wash jar(s) in hot soapy water; * place seal/lid in saucepan of cold water, bring to boil, simmer for two minutes, remove and dry; * air dry / dry seal/lid with paper towel; * place jar in saucepan of cold water; * bring water to boil over high heat; * reduce heat to medium and boil for 10 minutes; * air dry / dry with paper towel; * attach seal to jar / lid to jar.

Step 4
Prepare cucumber & onion mixture: * set out cutting board; * cut one end of each cucumbers, but leave other ends on; * use the Mandoline Slicer with Thick Slicer Attachment to slice cucumbers and place into large glass bowl; * use the mandolins slicer with Thin Slicer Attachment and Julienne Attachment, slice onions and place these into bowl also; * using measuring spoon, measure out one tablespoon (tbsp) of salt, and place into bowl; * using wooden spoon, toss to combine; * cover bowl with cling wrap; * place in fridge overnight to soften (can stir/shake during the softening process).

Step 5
Rinse & dry the mixture: * thoroughly rinse the cucumber & onion mix in the colander; * pat the mix dry with paper towel.
Step 6
Brine: * using the jug and spoon, place the 1 & 1/2 cups (375 ml) of apple cider vinegar, 1 cup (215 g) of caster sugar, 2 teaspoons (tsp) of mustard seeds, 2 teaspoons (tsp) of coriander seeds, and large (1/8 of tsp) pinch of ground turmeric into medium saucepan; * cook over medium heat, stirring with the wooden spoon for three minutes or until the sugar dissolves. * add cucumber mixture; * bring to simmer, then continue simmering for 5 minutes, then let cool completely.
Step 7
Jarring: * using the serving spoon, transfer the final mixture into the jar(s), avoiding filling the jars to the top; * seal and invert jar(s) for two minutes; * place in fridge; * leave for one day in fridge for flavours to develop.
Step 8
Storage: * store in fridge; * lasts for up to 6 months.
