Deirdre-style Low Carb Loaf - Bread Maker Edition (from Deirdre’s “For Real” Low Carb Bread)

This bread is amazing. It tastes and behaves like actual, honest-to-goodness real bread but it doesn't move my glucometer.
Yes, there's a teaspoon of sugar which isn't in the original but it's consumed by the yeast and doesn't seem to affect the net carbs. I figure my yeast deserves real food just like I do.
This loaf yields up to 16 slices depending on thickness. For nutritional tracking, I've said 10 slices per loaf. Most of the carbohydrate in this recipe comes from fibre rather than digestible starch or sugar. Net carbohydrates are approximately 3.2 g per slice (based on 1/10 loaf servings).
I've made a couple of minor changes, but this is basically the same loaf Diedre invented more than a decade ago.
These settings work for my Petrus bread machine.

Step 1

Attach the kneading paddle.
Step 2
Add the wet ingredients (water, eggs, butter) to the bread pan. (I add the water first because I often add too much, and it's much easier to pour some out and try again before adding the eggs). There is no need to beat the eggs; they will be fully incorporated during the kneading cycle.
Step 3
Add the dry ingredients, with the salt, sugar, and yeast added last. Keep the salt, liquid, and yeast separated until mixing begins (this is particularly important if using a delayed start).
Step 4

Set to French loaf / 1kg / Dark crust and start the machine.
After 5–10 minutes check for:
* cohesive dough ball
* slightly tacky, not wet
* not crumbly or tearing
If too dry → add 15 g water at a time
If too wet → add a pinch of oat fibre or gluten
Step 5
Allow to cool completely before slicing. This is critical because the crumb structure needs time to set. You can turn the loaf out when baking is finished, or leave it in the machine on the “keep warm” cycle.
