Ingredients

4 x 150gcod fillets
1 lbshrimp
large, peeled and deveined
4 Tbspolive oil
4cloves garlic
minced
1 tspdried oregano
¾ tsppaprika
increased slightly
¾ tspsalt
¼ tspblack pepper
1lemon
half sliced, half juiced
1 cupcherry tomatoes
halved
½ cuppitted kalamata olives
sliced
¼ cupred onion
thinly sliced
2 Tbspcapers
optional
2 Tbspfresh parsley
chopped
¼ cupcrumbled feta cheese
Instructions
Step 1
Preheat your oven to 200°C (400°F).
Step 2
Place the cod fillets in a lightly greased baking dish. Arrange the peeled and deveined shrimp around and between the fish fillets.
Step 3
In a small bowl, mix the olive oil, minced garlic, dried oregano, paprika, salt, black pepper, and lemon juice.
Step 4
Brush the oil mixture generously over the cod fillets and toss the shrimp directly in the dish so they are well-coated.
Step 5
Scatter the cherry tomatoes, sliced Kalamata olives, red onion, capers, and lemon slices around and over the fish and shrimp.
Step 6
Bake for 12 minutes first. Then, quickly check the shrimp; continue baking for another 3 to 6 minutes (15–18 minutes total), or until the cod flakes easily with a fork (reaching 63°C / 145°F) and the shrimp are opaque and pink.
Step 7
Remove from the oven, then top with the crumbled feta cheese and fresh parsley before serving warm.
