Instructions

Step 1
Prep the Oven & Pan: Preheat your oven to 350°F (175°C). Line an 8x8-inch or 9x9-inch baking dish with parchment paper, leaving a slight overhang on the sides for easy removal later.
Step 2
Make the Oat Mixture: In a large bowl, whisk together the oats, flour, brown sugar, baking soda, salt, and cinnamon. Pour in the melted butter and vanilla extract. Stir with a fork or spatula until fully combined and small crumbs form.
Step 3
Press the Base: Reserve 1 cup of the oat mixture for the top crumble. Press the remaining mixture firmly and evenly into the bottom of your prepared pan to form a solid bottom crust.
Step 4
Add the Filling: Mix your fruit preserves with the lemon juice. Spread the jam evenly over the crust, leaving about a ¼-inch border around the edges. Scatter the fresh berries over the jam layer if using.
Step 5
Top & Bake: Sprinkle the reserved 1 cup of oat mixture over the top, gently pressing down on the larger crumbles so they adhere to the jam. Bake for 30 to 35 minutes until the top crumble is light golden brown and the fruit filling is bubbling at the edges.
Step 6
Cool Fully: Let the bars cool completely in the pan at room temperature for at least 1–2 hours so the jam sets up. Use the parchment overhang to lift the slab out onto a cutting board and slice into 16 squares.
