Ingredients

6eggs
or a mixture of whole eggs and egg whites
6 ouncescream cheese
softened
1 ½ tablespoonAllulose
1 ½ cupalmond flour
2 teaspoonbaking powder
3 tablespoonsbutter
1 lbmaple breakfast sausage
cooked and drained
¼ cupsugar-free maple syrup
¼ cupunsweetened almond milk
or high protein milk
1 cupshredded cheddar cheese
regular or reduced fat
½ tspsalt
Butter
or cooking spray, for greasing muffin tin
Instructions
Step 1
Preheat oven to 350°F (180°C). Grease 2 - 12-cup muffin tin thoroughly. I use silicone muffin pans.
Step 2
Cook the maple breakfast sausage in a skillet until browned. Drain excess grease and let cool slightly.
Step 3
In a large mixing bowl or stand mixer with the whisk attachment, whisk the eggs until frothy.
Step 4
Add softened cream cheese, milk, sugar-free maple syrup, and sweetener. Mix until combined and smooth.
Step 5
Whisk in almond flour, baking powder, and salt until combined. If you have lumps, mix on high for a few seconds and this will help smooth out the batter. Let batter rest for 3–5 minutes to thicken.
Step 6
Fold in the cooked sausage and cheddar cheese.
Step 7
Divide batter evenly into muffin cups.
Step 8
Bake for 20–22 minutes, or until golden brown and a toothpick inserted comes out clean.
Step 9
Allow to cool for 5 minutes before serving.
